Life: lovely weekend

Weekend is lovely when it is short and sweet. Ours was great. One day full of action outside the house and one day full day of action inside the house! ๐Ÿ™‚

Saturday:

  • We started the day with a visit to my dear friend Sarah’s. I haven’t seen her for two weeks and it seemed ages although we exchange emails/calls several times a day! Chatting in person is so much better.
  • A trip to Costco.
  • A baby shower of a friend of Star. Sofia got to dressed up

I think she started to like being dressed up too because she was super excited

still can’t control her hair ๐Ÿ˜‰

the baby shower was fun with a lot of chinese food. The only problem for being outdoor the whole day was that at the end of the day Sofia was fussy and cranky due to lack of proper nap. Fortunately it didn’t affect her night time sleep.

Sunday:

  • First I want to report that her eczema cleared up OVERNIGHT!!! What did we do? These two medicines that I got from the pediatric dermatologist

literally, we applied once on Friday and twice on Saturday, and the eczema is 99.99% gone! The other thing that I did was cut off egg consumption. According to the doctor, dairy and egg are the most common allergic food for small babies. And when the eczema is only present in the face, it is most likely due to food allergy. So, no more eggs for mommy for a while ๐Ÿ˜ฆ but really happy to finally find the solution after struggling over a month. I’ll start eating fish again to see if she reacts to it again.

Sunday is meant to be a day to start with pancakes, right? That’s what I thought ๐Ÿ˜‰

high protein buckwheat pancakes with PB sauce (PB thinned with almond milk).

Since I can’t eat egg anymore, I used flax egg (1.5 tbsp + 3 tbsp water), 1/4 cup buckwheat pancake/waffle mix, 1 scoop of protein powder, 1/3 cup almond milk.

And then I spent the morning baking. One of my favorite thing to do on a Sunday too. ๐Ÿ˜‰

I made a japanese spongy cake (recipe to come)

Condensed milk bread (recipe to come)

IMG_3958

my mom’s favorite tea cookies (recipe to come)

I also made a batch of nut butter cookies without raisin but with coconut for snack at work

For lunch, my dad requested a dish that he used to love when my parents were dating. ๐Ÿ˜ฏ I feel so honored to be called to re-create it. It’s called sweet tomato-sauce prawnsย ่Œ„ๆฑๆ˜Ž่™พ

I improvised and the end product was surprisingly good. My parents raved about it! ๐Ÿ™‚ Mission accomplished.

accompanied with sautรฉed sweet pea with bacon

Since I had green light to eat fish now, I couldn’t wait any longer to have baked salmon for lunch.

IMG_3962

side dish: mushroom, broccoli and baby spinach sautรฉed in coconut oil and splash of soy sauce. YUM~

Afternoon: manicure and coffee

and maybe some yoga later.

I’m a spoiled girl who have one friday off every other week, so when weekend is only two days it feels really short! ๐Ÿ™‚ Good to know that next weekend will be 3 days.

  1. I can’t wait to see the Japanese cake recipe! Is it a honey cake?

Do you do your nails yourself? I love the color! Whenever I try to do a manicure, it looks so messy haha.

  2. Sounds like a lovely weekend! And you did so much cooking & baking! I always feel good when I get to spend quite a bit of time in the kitchen on Sundays!

    Have a great (short!) week!

  3. Jenny

Can’t wait for the Japanese sponge cake recipe! ๐Ÿ™‚

  4. Sofia is adorable in her dress! I’m so glad to hear her eczema has disappeared! It’s amazing how much the foods we eat can affect our bodies, isn’t it? And speaking of food–everything you made over the weekend looks delicious! I love protein pancakes, and the Japanese sponge cake is calling to me, too. How did you make your prawn sauce? That looks like a dish I’d enjoy as well!

I hope you have a wonderful Monday, Coco!

  5. Mmm the baked goods look so good! And your recipes seriously always look amazing~if I have time and the recipe sounds feasible, I’ll def. try to give the cake and cookies a shot ๐Ÿ˜€ And so glad you can eat fish! I know what torture it is not eating it for us fish lovers. I go kinda crazy if I can’t have it at least once a week! haha

  6. Those prawns look amazing, Coco!!!

What a cute dress Sofia is wearing! Love little girl clothes…

  7. Sofia’s hair is sooooo interesting!! why it is always sticking out? ๐Ÿ˜€ I have enzema when I move down here. You have to put lotion (cetaphil works for me), every time you shower. It helps.
