Food: low sugar pound cake and muffins

Last weekend I baked two goodies for my parents. They both like sweet breakfast (I don’t) so I bake them as much as I can when they’re here.

For me healthy cakes are those that have high fiber, low sugar and healthy fats. With that in mind, I make two goodies for them

#1: Low sugar fruity pound cake

  • 150g all purpose flour
  • 75g WW flour
  • 50g sugar
  • 2 eggs
  • 180g milk
  • 75g coconut oil
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup raisin
  • 1/4 cup pecan
Mix dry ingredients and liquid ingredients separately first and then mix them together, bake 30-35 min at 350F

#2: Sugar free raisin muffins

using the same recipe above but replace sugar by baking stevia, and add more raisin (1/3 cup) and omit pecan. The result is as good as the previous one. You can’t taste anything weird! 🙂

Food: baking with coconut

I’ve been doing a lot of baking with coconut flour. I like the texture it creates, it’s much more like a cake than a muffin whenever I bake with it.

Coconut applesauce muffin

For 6 mini muffins 

  • 2 tablespoons coconut oil, melted
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 teaspoon vanilla extract
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

Bake 15 min at 375F.

And I made a quick icing for it (1 tbsp of cream cheese with 2 tbsp almond milk)

It tastes even better after freezing it for few hours. I love that coconut flour is naturally sweetened! 🙂

To prepare for my mom’s arrival, I made her a pound cake with dry fruits

For 2 mini pound cakes:

  • 150g all purpose flour
  • 50g butter
  • pinch of salt
  • 1 egg
  • 120g milk
  • 1 tsp baking powder
  • 1/2 cup chopped dry fruit (I used dry apple and dry pear)

Steps:

1. Beat sugar with the butter until white

2. Add egg and milk and blend

3. Mix flour with baking powder and salt

4. Add 3 to 2 slowly, mixing well

5. Add dry fruits

Bake for 30 min at 350F

After I finish that batch of mini coconut applesauce muffins, I made another batch with different ingredients.

Coconut Apple oatbran muffin

For 6 muffins:

  • 1/2 cup oat bran
  • 1/4 cup coconut flour
  • pinch of salt
  • 1/2 tsp baking powder
  • 2 tbsp NuNaturals baking powder
  • 2 tbsp coconut oil
  • 1/3 cup applesauce
  • 1/2 cup egg white
  • 1/4 cup almond milk
  • 2 small apples, shredded

Bake at 400F for 20 min

I haven’t tried these, but they look pretty good, right? 😉

Oh… I finally made coconut flour pancakes with the cream cheese icing!

I definitely should make them more often!

IT’S HERE!!!

The ring is HERE!!!! 😆 Remember that I sent it back to resize it? After two weeks, it’s finally here in my hand!!!

Okay. It’s still not the perfect size. It’s a little bit loose on my left ring finger, so I tried it in my right finger

it’s okay, but still not perfect because the middle bond in my finger is not big enough, so it might slide out. But it fits perfect in my middle finger.

I know I know… it shouldn’t be used in middle finger…. but I guess I care about its security more than what’s tradition says. 😉

It’s sooooo sparkling and beautiful! i love it!!! 😀

I finished the happiness project and started a new book and look this quote!

Because I knew the Fedex man was going to arrive around 9AM, even I was up since 3AM 😯 I couldn’t start working until then. Too much excitement! 😉 While I waited… I had a great breakfast to boost my low key mood because of lack of sleep. I mentioned that I did some baking and here’s the final product.

Applesauce flax muffins:

  • 1/2 cup whole wheat flour
  • 1 cup oat grounded
  • 1/2 cup flax meal
  • 1/2 cup applesauce
  • 2 tbsp honey
  • 1/4 cup raisin
  • 1/2-1 cup soy milk
  • 1 tsp baking powder

Mix and bake for 35 min at 350F.

Served with apricot preserve and soy&corn milk

I finally broke the packed dumpling that I brought from Germany. That’s my favorite Bavarian food! 😀

Work wasn’t productive AT ALL!!! My mind couldn’t figure out ANYTHING!!! (obviously, how can I ask it to work properly if it hasn’t rested for a while). So I called quit very early. For dinner I made POACHED EGGS for the first time!!! 😀 And I’m soooo proud of myself, they came out PERFECT!!!

It wasn’t a productive day in term of work, but I guess it was a good one in term of food. 😉
