Food: new combos

As I mentioned last week, I got bored of my usual eats, so I had to find new combos to invite my appetite back. I found few new meals that I enjoy. See below

Breakfast: instead of protein cake, I topped greek yogurt and peaches with 2 tbsp of flax meal, 2 tbsp of coconut flour and 1/2 cup of almond milk

For lunch, I had this vietnamese noodle bowl that comes with glass noodles, assorted veggies, calamari in a soy ginger broth.

I love all these combos! Ready in <10 min and delicious! ๐Ÿ™‚

And a chinese meal, seaweed salad, aduki bean oatmeal porridge

As dessert, I’ve been having steamed kabocha with a chocolate mouse made with avocado, silken tofu and cocoa powder. The mouse is soooo smooth with avocado! Love it! ๐Ÿ™‚

Food: revisiting some old favorites

I’ve been browsing my old posts and found these dishes that I used to love. Since my mom arrival, I stopped cooking but last weekend, I took in charge of the kitchen again and recreate some of my favorite combos! ๐Ÿ™‚

#1: Warm salad topped with veggie stir-fry with olive preserve olive leaves

the stir fry is made with brussel sprouts, onion, bell pepper, mushroom. I topped it on a bed of romaine and cherry tomatoes

served with baked salmon, another old favorite.

I enjoyed so much these combo. Unfortunately I was bloated the rest of the day.

#2: shiritake noodles with veggies and Tj’s turkey meatballs

I use 1/2 cup of marinara sauce, 1/2 cup water, once it starts boiling, I add frozen okra and broccoli, wait another 2-3 min until they cooked, add 4 Tj’s turkey meatballs, cook until they’re done, add the noodles and S+P.

I enjoyed it too except 4 meatballs were too much meat. Next time I’ll use less.

#3: Stir-fry of veggies with vegetarian chicken (็ด ้ธก๏ผ‰with olive preserve olive leaves

veggies used: lotus root, frozen bamboo, bell pepper, mushrooms and romaine lettuce

served with brown rice, millet and dates porridge

I think I can eat this for every meal if it does not cause so much bloating!

#4: tortilla pizza with tofu cheese

1. Boil tortilla until cripscy

2. Make the “cheese”: tofu + tahini + vinegar + nutritional yeast + S+P

3. Spread tomato paste over tortilla, top with veggies (mushroom and broccoli) and tofu cheese. Add more S+P if necessary.

4. Bake at 450F for 10 min.

Weekend happening: sleep, eat, gym and repeat

The past few days were total relaxation. Due to Star’s luck of sleep on his business trip, all he wanted to do is to sleep (day and night)! Asย Erin would say:” Yes, my lord, sleep we’ll do! ๐Ÿ™‚ Other than the 5k race on Saturday’s morning and my dearest friend’s birthday party at night, we just stay at home and relax.

I finally convinced Star to join my beloved gym! He’s been sedentary for more than a decade. I encouraged him to exercise more but always failed until now. He has turned 34 few months ago and it became mandatory for health purpose to start exercising, specially with his propensity to have diabetes (his mom has it). So, now he has committed to go to the gym whenever he stays with me (hopefully >3 days a week). So far he’s liking it and I like it even more!!! Because now I don’t feel bad to leave him at home alone when I go to the gym~~~ ๐Ÿ˜†

While he takes long naps… I bake ๐Ÿ˜‰

for my lord: peanut butter cookies with homemade PB

I used roasted peanut with sea salt. Ground 7 min and done! Nothing else, just peanuts!!!

beat 100g butter with 80g of sugar and 2 eggs

once it becomes white, add 100g peanut butter

add 200g flour

and 1/4 cup of sesame seeds

bake at 375F for 20 min.

I also made multicolored soy milk (soy, aduki, mung and black bean) for breakfast

It was the last piece of bread… so I’m making a new bread (as I type)

Other eats:

noodles with bok choy, eggs and olive preserved olive leaf

I’ve started to make nutritious soup that takes >4 hours to make. I made black chicken soup with assorted chinese herbs on Saturday and this one on Sunday.

this one has pork feet, black beans, shiitake and red dates. I made sure to take out most of the fat from the pork feet, so what’s left is the collagen. Collagen = beauty weapon against saging!!! All asian girls know that ๐Ÿ˜‰

If you excuse me, I need to look how the bread-making is going and to prepare lunch for my lord. hahaha… That’s how I feel today, most of the days I feel like the queen and he my loyal servant ๐Ÿ˜‰

Q: Are you a soup person? What’s your favorite soup? I’ve never been a soup person, but my acupuncturist told me that soup is good, specially for people with weak digestive system, so more soup for both of us!
