Food: stir-fries

I’ve been living in stir fries this week. They’re easy to prepare and within 15 min a balanced nutritious meal is ready.

For breakfast I’ve been having almond milk with an egg sammie

I’m usually too full for any dessert, so I’ve been having 1-2 pieces of dark chocolate after dinner. Baby is taking all the room down there! 🙂

Busy and fun Saturday!

How’s everyone’s weekend? Mine is GOOD! 😆

While I waited for Star to arrive, I prepared a YUM breakfast. Hiatus from Petit Macro, I wanted eggs… so omelette I made.

IMG_0148.JPG

4 ingredients: shredded zucchini, 2 whole eggs, 1/4 cup almond milk and 2 tbsp parmesan

IMG_0137.JPG IMG_0140.JPG

so simple and so filling!!! 😆

IMG_0144.JPG

perfect with ketchup

IMG_0152.JPG

then Star arrived, we hang out a little bit, catching up (I haven’t seen him for almost a month!) and went for lunch at Kanpai

IMG_0005.JPG

Our combo came with a salad as appetizer. I had mine with carrot ginger dressing and Star had sesame dressing

IMG_0008.JPG

I also had miso soup

IMG_0009.JPG

He’s not so into salad… had two bites before passing his bowl to me 😉 Salad with asian dressing.. the more, the merrier! 😉

IMG_0010.JPG

Star ordered udon with chicken and shrimp tempura

IMG_0011.JPG

I had grilled yellowtail that came with rice

IMG_0015.JPG

We both enjoyed our meal and it was a good deal too. I got a groupon for 30$ ($15 paid), and we paid $10 more tip included, not bad right?

After lunch, we went to watch RED. I was expecting an action movie but it turned out to be quite funny too! 😀

oh…. and I had my first PUMPKIN SPICE LATTE!!!!

IMG_0016.JPG

A real beauty, isn’t it? I couldn’t taste much pumpkin spice but it was tasty 🙂

Mr. Charming host another party, it was more than +30 people! A lot of appetizers and a lot of alcohol! Both Star and I enjoyed chatting with friends and left around midnight! Quite an amazing day! :lol

Q: Do you like parties crowded by friends or strangers? I mean, not completely strangers, but people that you are not friend with. I enjoy more chatting with good friends than meeting new people. I feel more relaxed being with people that I already know than working “hard” to keep up a conversation with strangers.

Day -2! I’m nervous

2 days away from my first Half Marathon!!! 😆 I’m excited and nervous! Excitement was 80% until I saw these:

I can’t believe that I have to end it up with a HILL!!!! 👿 That’s not good!!!

AND

can this get WORSE? RAIN? Seriously???? I’ve been checking weather since Monday and was crossing my finger that it changes. But apparently not! 👿 Now you understand where my nerve comes from, right? I’m worried and a little bit scared.  But the good thing is that Star will be cheering me up and I’ll be running with my best friend Agustin (he already run 5-6 halfs before), my advisor (who’s >50 yrs old and run >10 races before) and Beth!!! That’s exciting!!! 😆

Well… at this stage, I I can’t do much other than eat and sleep well today. 😉

*******

Now let’s rewind to yesterday’s eats. Appetite is not visiting me lately 😦 so I had to be extra creative 😉

Extra puppy coconut pancake

IMG_9109.JPG

I wanted to try it with only egg whites but it turned out to be a mess.

IMG_9117.JPG

After reading Emily’s post, I decided to make zucchini “noodles” for lunch

IMG_9124.JPG

topped it with tomato sauce

IMG_9125.JPG

add some tofu for protein

IMG_9127.JPG

nuke in the microwave for 2 minutes. Top it with homemade sweet potato gnocchis

IMG_9128.JPG

parmesan cheese is a MUST!

IMG_9130.JPG

this amazing meal was ready in <15 min!

YUM~~~

IMG_9136.JPG

double YUM~~~

I worked at home until 3 PM when I started to lose focus. So, I went to Caribou Cafe just crossing the street (so good to be living in a city  ;)). Worked there until 6 PM when hunger kicked in 😉 so I went to WF (a block away) to pick something to snack

IMG_9139.JPG

spotted a new organic yogurt

IMG_9141.JPG

I don’t mind when it’s not thick or creamy as long as it tastes good

IMG_9144.JPG

peach + yogurt + golean

IMG_9147.JPG

I didn’t like the yogurt 😦 so “greeking” it as the solution

IMG_9148.JPG

I looked at the fridge and saw this chinese winter melon. Need to use it!

IMG_9149.JPG

dry scallop

IMG_9150.JPG

Easy pissy! 😉

IMG_9157.JPG

and a stir-fry of chinese green bean, mushroom and cauliflower (my fridge is officially empty now ;))

IMG_9159.JPG

served with black rice/oatmeal/kabocha bowl

IMG_9161.JPG

Today is going to be an easy day. Star is coming back home in about 30 min… we’ll do groceries (I have a chinese meal feast to prepare tomorrow for his new co-workers) and mainly relax and enjoy each other’s company! 😀

Q: Are you friend of your hubby’s co-workers? Do you like socializing with them?
