Food: a variety of eats

As I transitioned to enjoy again the joy of cooking and eating new combos, I’ve been eating a more varied spread of food! 🙂

Breakfasts:

Almond milk, cherry (sooo sweet that I cannot eat more than a handful at the time) and a tortilla-egg mess

IMG_7619

I simply heat a tortilla, spread LC cheese, cracked two eggs (one each side) and top with ketchup.

IMG_7620

Sliced peaches, homemade soy milk and radish pancakes

IMG_7607

A “pudding-dessert” like combo of 1/2 cup ricotta cheese, 2 tbsp coconut flour, almond essence, 1/2 cup almond milk, topped with walnuts. Really tasty! 🙂

IMG_7612

Cherry, chocolate almond milk and a protein cake. I used a different recipe this time:

  • 1 scoop of protein powder
  • 1/4 cup egg white
  • 2-3 tbsp almond milk
  • 1 tbsp flax meal
  • 1/2 mashed banana
  • 1/2 tsp baking powder
Mix everything and microwave for 3 min.

IMG_7628

It’s a very high protein and tasty but the texture is a bit too chewy, not as cakey like as my original protein cake.

Meals:

IMG_7605

A soup made with winter melon, bamboo, black fungus, tomato and mushrooms. I love it so much that I’m cooking another batch right now! 😉

IMG_7604

Wonton with purple laver soup (still 15 more serving to go!)

IMG_7609

Cleaning fridge kind of dinner. Corn-black rice porridge with

IMG_7617

sauteed lotus, mustard greens, black fungus and onion

IMG_7615

steamed egg

IMG_7616

Korean-chinese dinner?

IMG_7625

sauteed greens with mushrooms

IMG_7626

and store-bought kimchi (I had to wash it out 2-3 times to make it less spicy and salty)

IMG_7627

Grilled chicken with salad

IMG_7621

I like simply grilled chicken more than any other form.

IMG_7622

Salad and almost cheeseless pasta casserole

IMG_7645

Chopped salad made with mixed greens, cherry tomato, cucumber and mushrooms, dressing with olive oil, balsamic and mustard.

IMG_7648

The almost cheeseless casserole is delicious. I can’t wait to make more variation of it! 🙂

IMG_7649

I’d say it was a good week of eats! Variety keeps nutrition all covered and more fun to eat as well! 🙂

Q: What was the last blogger recipe you made?

Food: post food comma and avocado casserole

I felt terrible when I woke up the next day after being in food comma. I was sleep deprived and bloated . I didn’t want to eat anything until 10AM and when I finally did, all I wanted was strawberries. Glad that Whole Food is just a block away from home, I went there just to get it. Excited about eating a bowl of organic strawberries that costs me $5, but it tastes nothing! No sweet, no sour, nothing!!! 😦

IMG_2198.JPG

few hours later… I made a veggie soup with celery, burdock root, onion, tomato, collard and chicken broth.

IMG_2195.JPG

chop and boil

IMG_2196.JPG

add a tbsp of miso at the end

IMG_2199.JPG

voila! a colorful soup, perfect as post food comma meal~

IMG_2201.JPG

At night, I made a egg-tofu scramble with onions, asparagus and tahini. It was delicious~~~ definitely going to make it again!

IMG_2203.JPG

Yesterday I made avocado casserole

IMG_2077.JPG

blend 1 large avocado, 1 cup of pumpkin, 1/4 cup nutritional yeast, juice of half lemon, garlic, mustard, S+P and 1/4 cup milk

IMG_2079.JPG

IMG_2083.JPG

prepare the brown rice pasta and chop some steamed broccoli

IMG_2084.JPG

mix everything (added some chopped peppers to color the dish), top with parmesan and bake for 30 min at 400F.

IMG_2095.JPG

It was soooo rich and filling! I’ve never tried mac and cheese :opss: but from what I’ve seen in the blog world, this casserole resembles it! 😉

IMG_2102.JPG

and finally, my latest breakfast combo: toasted bread + avocado + friend egg

IMG_2116.JPG

love love love this golden liquid

Q: What do you eat after a food comma?
