Food: groceries & a new salad obsession

SAturday’s breakfast: the usual banana-egg pancake. This time instead of coconut flour I used almond flour. It’s nice too but I prefer the texture of the one with coconut. It’s more cake-like.

  • mushrooms
  • nut butter
  • organic pear (for Sofia)
  • Suzie’s thin corn cake (obsessed with it)
  • Theo chocolates
  • 2 bunches of organic kale (for my new salad obsession)

  • avocado (a weekly must!)

oatmeal is better than rice because rice could be constipating.

And here’s my new salad obsession: massaged kale salad with tahini-avocado

Ingredients:

  • 3-4 cups of kale
  • 1 cup chopped cherry tomato
  • 1/2 cup chopped mushrooms
  • 1/2 avocado
  • 1 serv. firm tofu, scrambled
  • 2 Tbsp tahini
  • 1 Tbsp lemon juice
  • 1 Tbsp maple syrup
  • salt
  • pinch of cayenne pepper

Method:

1. Prepare the dressing: tahini, lemon juice, maple syrup, salt and cayenne pepper well mixed.

2. Pour the dressing over kale, add chopped avocado, tofu and mix well with hands (or massage it).

3. Add cherry tomato and mushrooms.

4. Let it sit for 30-60 min before serving.

5. Prepare to enjoy a tasty, filling and delicious salad!! ๐Ÿ™‚

Q: Do you like kale? What’s your favorite way to eat it? I didn’t like kale first unless it’s in chips form. But lately I’m obsessed with it, it has became my favorite green veggie. The key to eat it raw is to massage it with the dressing and let it sit for a while before serving. It’s soooo delicious and full of nutrients.

Perfect rice!

I’m in love with my new kitchen toy: theย rice maker. It makes the most delicious brown rice ever!!! ๐Ÿ˜†

I have three delicious meals to share today, so let’s start. ๐Ÿ˜‰

Breakfast: fage + aduki beans + coconut butter.

It is delicious and filling. Coconut and aduki is a magic combo. It reminds me theย aduki aduki mousse.

Lunch: mashed cauliflower + baked salmon + sauteed mushrooms

mashed cauliflower: 1/2 head of steamed cauliflower, 1 tbsp butter, salt, pepper and 2 tbsp of almond milk. I don’t like mashed potatoes, but I love this! ๐Ÿ˜€

And the brown rice. 1 cup of brown rice, fill water just at the 1 cup line for brown rice

about 2 hours later.ย the best homemade brown rice ever!!! And I didn’t even soak it! ๐Ÿ˜ฏ I was really amazed. Usually I’d soak the rice over night and still don’t get this. I’m soooo happy with this purchase. Thank you,ย Maggie.

and then I wanted to recreate the squash tofu that I had inย Soeun

I forgot the tofu and used only veggies that I had: 2 mini eggplants, chinese cabbage, broccoli and kabocha

steam it for 10 min while I made the sauce: white miso paste (1/4 cup), tahini (2 tbsp), ginger and garlic

all to the food processor + 1/2 cup water

heat the sauce in a wok

cook for 5-10 min until veggies are done.

It was really good (although still not as good as Soeun’s). I enjoy it so much! ๐Ÿ˜† I thought I didn’t like rice anymore… I was wrong. Now I want to eat rice everyday!!! ๐Ÿ˜†

I wonder… why two yummy ingredients together does not produce exponential yumminess?

To reinvent my morning toast, I combined tahini with mashed avocado, hoping for some magic. Nop! that didin’t happen ๐Ÿ˜ฆ
