Longest run and good eats! :)

8 miles was on schedule this week. I was intimated by the distance because last week’s 7 miles was quite challenging… I barely finished it. I told myself: just give it a try, if you can’t finish it, just walk. Once the exit door was set, I felt better and more confident immediately. Instead of worrying not be able to finish it, I tried to find the way to make it more enjoyable. So, I started slow, 8.50 min/mile (usually my pace is around 8.30 min/mile). I explored a new route, Rock Creek Park Trail.Β The scenery was amazing, the weather not hot nor humid, I enjoyed every minute of the run πŸ™‚ by the time I realize 5 miles was gone and I didn’t feel tired at all… so the last 3 miles was piece of cake πŸ˜‰

After the shower, feeling AWESOME πŸ˜†, I prepared a proper breakfast. First since….I can’t even remember when was the last time I spend more than 5 min preparing a breakfast 😯

I used Namaeste gluten free waffle mix to make the waffle, peach/fage/blueberries flaxmeal open parfait, cucumber/celery juice and beautiful flowers πŸ˜‰

real delish~~~ πŸ˜†

I finish breakfast around 11 AM 😯 and by the time I finish reading the newspaper and check on blogs… it was almost 2PM, time for lunch πŸ˜‰

I craved something simple since I was still full from the breakfast. Baked tofu came on my mind πŸ˜‰

and kabocha mousse made with roasted kabocha, miso and tahini

fresh steamed corn

Lunch at 3 PM

A yoga class in the afternoon, called my mom, did groceries and ready for dinner~

bamboo/black fungus/tomato/dry shrimp stew over noodles + another corn! πŸ˜€

and a lot of dark chocolates! My first time having Godiva. I know these are expensive, but I must admit they’re really good! πŸ˜€

:opss: I just realized that all I did on Sunday was EAT! πŸ˜†

Q1: What’s your favorite brand of chocolate?

Q2: How do you Β mentally prepare for a hard workout?

Asian flavors & A race?

I used my new running shoes for the first time yesterday!!! I’d say it worth every penny of the 100 bucks!!! πŸ˜€ It’s light, it fits perfectly and I can tell that it provides more cushion than my previous nike. πŸ˜€

I was feeling weak yesterday, I slept a 2 hours nap (very unusual ). I needed a stress reliever and a mental giveaway (my coding didn’t went well and I was in panic). I ended up doing 4.5 miles, 35’50”, 8 min/mile.

For lunch I made a japanese style meal using these

Soba salad with veggies and bonito flakes! πŸ˜€ YUM~~

I’ll definitely make it more during the summer! It’s easy and delicious!

What you need: soba, veggies, bonito flakes, bonito seasoned soy sauce (or just soy sauce), sesame oil, salt and sugar.

1) cook the soba, rise with cold water and set aside

2) cook veggies with salted water

3) prepare the sauce: 2 part of soy sauce + 1 part of sesame oil + salt + sugar

4) mix everything and top with bonito flakes!

I also made asian “pudding” using cooked white fungus with goji berries

used agar-agar powder + stevia (review to come)

End product!

isn’t it pretty? πŸ™‚

Continued with asian flavors, dinner was chinese. I made steamed fish just like chinese restaurants.

1) Steam the fish (seasoned with salt, cooking wine and ginger) for 7 min in boiling water.

2) Heat 1 tbsp of canola oil + 2 tbsp soy sauce

3) Pour the hot oil to the steamed fish and top it with fresh scallion.

I can guarantee you that it’s AMAZING!!!

assorted veggie stir-fry

porridge made with millet, polenta, goji berries and chinese dates

very satisfying meal~~~ I’m sooo making the fish again tonight! πŸ˜€

A race? Yeah~~~ I’m going to run my first 5K today! in <2 hours!!!! πŸ˜† Β As everything else that I do (like getting married?), it was 100% spontaneous decision. After I came back yesterday from the run, I was feeling the runner’s high and decided that I’d participate the 5k for autism organized by my university!!!! πŸ˜€

I’ll be back later with the result!!! πŸ˜€ Wish me luck!

Q: when was your first 5K? Stats? not to compare πŸ˜‰ just to have a reference.
