Food: quick meals

I’m less and less interested in cooking lately… maybe because I don’t have much appetite or I am just tired most of the time. So meals have been just quick and simple, but making sure I get all the nutrients, specially protein and calcium.

Breakfast combo have been all over the place. One day I wanted something sweet but didn’t want to spend time preparing anything elaborated. So, I had a big white peach (still loving it!), almond milk (for the calcium) and a bowl of greek yogurt with frozen straberries and flax meal

Some other day I had a breakfast frittate made with 2 eggs and 2 egg whites, spinach, tomato and mozzarella.

simply pour the beaten eggs into a pan until it’s half way cooked, top with the veggies and the cheese and bake at 400F for 10 min.

I should make this more often, it’s tasty and nutritious.

Dinners have been veggie loading because usually I’ll have a carb+protein for lunch at work.

That’s how I’ve been eating.. as you can see, stir-fries are still my best friend! 🙂

Food: eat to live

This past week I ate to live, for myself and my little baby. My mind was elsewhere (mainly disturb by the headache) so I basically ate whatever was easy to make and sounded at least eatable at the moment.

Breakfast was overnight oats

following Kath’s recipe, I used 1/3 cup oats, 1/3 cup almond milk, 1/3 cup greek yogurt, 1/2 tbsp chia seed. Adding 2 chopped peach. The next morning, added cocoa butter and mix.

it was easy to make but honestly I was not sold.

So I switched back to my recent favorite combo

1/2-3/4 cup greek yogurt, 1 chopped peach, 1 cup raspberry, 2 tbsp flax meal, 2 tbsp cocoa powder, all mixed.

Star is back and this is the first breakfast I made for him. Porridge with sweet chinese pancake

simply mix 2 beaten eggs, 1/4 flour, 2 tbsp honey and cook with some oil 3-4 min each side.

The only meal I cooked on the stove: stir-fry veggies with chicken in hoisin-tamari sauce, with brown rice

summer squash is in season. They’re fresh and tender. I used two medium ones, 2 cups of frozen veggies and trader joe’s chicken tenderloin. A quick meal made under 15 min.

And almost every night from Monday to Thursday, I had panini sandwich, either cheese with egg or cheese with avocado.

Now that Star is back, I’ll be cooking more. Now that Sofia needs to gain 1/2 lb a week, I need to feed her more! 🙂 Hopefully I can come up with new combos that I we enjoy! 🙂

Food: new combos

As I mentioned last week, I got bored of my usual eats, so I had to find new combos to invite my appetite back. I found few new meals that I enjoy. See below

Breakfast: instead of protein cake, I topped greek yogurt and peaches with 2 tbsp of flax meal, 2 tbsp of coconut flour and 1/2 cup of almond milk

For lunch, I had this vietnamese noodle bowl that comes with glass noodles, assorted veggies, calamari in a soy ginger broth.

I love all these combos! Ready in <10 min and delicious! 🙂

As dessert, I’ve been having steamed kabocha with a chocolate mouse made with avocado, silken tofu and cocoa powder. The mouse is soooo smooth with avocado! Love it! 🙂
