Journal: the struggle continues and a recipe

Yesterday was another napless day! 😦 but I think I have a new strategy to try try. There’s always hope! πŸ™‚

I prepared this breakfast while holding Sofia in one arm because my mom was still sleeping and mommy is hungry.


A protein cake made with 2 egg whites, 1/2 cup pumpkin, 2 tbsp coconut flour, 1 tbsp coconut oil and 1 tbsp cocoa powder, pinch of stevia. Microwave for 3 min. Paired with a honey crisp (love it!)


This is one of my favorite easy-to-make sweet breakfast combo.

and a cup of earl gray with milk. I wad wondering if it’s the caffeine that is making her restless and hard to fall into sleep. The day before I had a cup of tea and a small cup of coffee. Yesterday just a cup of tea. It’s a recent habit that I’ve developed, so I wonder if that’s the why. I’m cutting out all the caffeine drink for now, sticking with decaf and throwing out chocolate as well (sorry, my beloved Lindts with sea salt!) to see if things get better. (Strategy #1) Will report back!

Morning was spent trying to put her to sleep. She used to sleep 1-2 hrs well in the swing…


she looked asleep, but no, she was up after 15 min! I was so sleepy that I dozed those 15 precious minutes on the side.

Lunch time came along and I hoped food made me feel better mentally. Continuing with spaghetti squash, I made a stir-fry “chow mien” using spaghetti squash, 1/4 onion, 1/2 cup chopped celery, Tj’s chicken sausage and 4-5 large mushrooms chopped, seasoned with tamari, S+P and pinch of sugar.

Since my mom didn’t sleep much the night before, I took Sofia to the basement so mom wouldn’t hear her crying just in case. She snuggled on my chest for a while and fall into sleep :shock:. But we had to leave the house for her one-month-check up. I transported her to upstairs because I needed to change, and surprisingly she didn’t even wake up


I let her sleep for 10 more min in that awkward/uncomfortable position

She slept through the 15 min ride and 10 min wait at the Pediatric


The doc checked her weight (8 lbs. 9 oz. that’s more than 2 lbs gain since birth) and height (21 in.), everything is looking great! she’s at 50% percentile in both weight and height. Good girl! And good mommy for producing enough food for her! I was really proud about myself for being able to carry her in my belly, gave birth and now to be able to nurture her!!! πŸ˜† Mother nature is really incredible!

She got the second hepatitis b shot and she cried!!!! A real cry with tears! Poor girl!

When we got back, I nursed her and fed myself with an apple and a sea salt caramel & almond mini bar.


and then I had to prepare the fillings for the empanadas that I promised Sarah to make for her baby shower (today, saturday!). I promised to Maggie to post the recipe, so here it is the step by step tutorial! πŸ™‚

Argentinean Empanadas

  • 1 lb. grounded beef
  • 2-3 onion, chopped
  • 2-3 tbsp of flour
  • 1/2 cup seedless raisin
  • 1/2 cup green olives chopped
  • 3 hard boiled eggs chopped
  • 1 egg yolk
  • 1 cup of stock or water
  • oil
  • Salt, pepper, italian seasoning
  • pinch of sugar

First, heat the oil and sautΓ© onions for 5-10 min


at the same time, boil eggs


once the onions become translucent, add beef


use the spatula to spread the beef and let it cook evenly until brown


about 10 min, add the flour and mix well


add the stock or water and let it simmer for 10 min


add the seasonings


Let it cool before adding eggs, raisin and olives.


These are the doughs that you can get from shoppers or any latin market


once filled in, here’s the final product before baking

top these with egg yolk and bake at 350F for 40-45 min until the dough is done.

After making these, I had a quick dinner, the same as the other night prepared by my mom.

I nursed Sofia around 7:30 PM and put her down at 8PM, fortunately she went to sleep. I think holding her up after nursing makes her feel better by avoid reflux and also it makes her fall into sleep. 30 min seems to be the magic number, she fall into deep sleep by the time i put her in the crib. So i am trying to do that for her naps today. (strategy #2).
It is the third day on a row that her bed time is at 8PM, I think it works well so we’re sticking to this for now. πŸ™‚

Before giving birth I thought the biggest issue was breast feeding, now I think it’s the sleeping pattern. If we can solve this, we are all set. So if you have any tips on helping small babies to sleep, please let me know. πŸ™‚

Life: a great week

  • Highlight of weekdays: very productive at work. I only had lunch meeting once, the other days I ate at office and got back to work right away. The feeling of being productive and accomplish something everyday, even it’s small, is really satisfying and rewarding. πŸ™‚
  • Saturday: I organized a lunch at home with my best friends from grad school. One of them is leaving the country next weekend, so I wanted us to get together once more before he departs to Canada. Since the weather was nice, we had it at the deck with our newly purchased outdoor set. I prepared some simple food like Argentinian Empanadas

my friend Belen also made some empanadas, these are open faced spinach and parmesan empanadas

the empanadas turned out to be great! My friends loved Β it and kept telling me how tasty it was.


And we had three desserts. One made by my friend’s wife Flopy, a coconut dulce de leche pie, which was amazing!!!

the group! we’ve been through so much together… 5-6 years of friendship under hard-working grad school environment. You can really make life long friends there! πŸ™‚


It was a great lunch. The food was great, the weather was perfect to be outdoor. And the best of all, the company of course!!! I’m a bit sad that two of my friends found job outside the US, I’ll be missing them so much!!!!

  • Sunday: I finished the book that I started on Saturday! Yes, I finished it in two days!!! It is a great book, so inspiring! Maybe I’ll do a review next weekend. πŸ™‚ So many good thoughts to share with you! πŸ™‚


I did a lot of food preparation in the afternoon, in addition to a nap! I’m back to chinese-food! You’ll see! πŸ™‚

Life: Thanksgiving 2011, the best thanksgiving so far!!!

Thanksgiving 2011 was FABULOUS! We celebrate it with 20+ friends, some new friends, some old friends, some friends that I know I will have for life! πŸ™‚ It was soooooo much fun! I TRULY LOVE HOSTING FRIENDS AND FEEDING THEM ALL! πŸ˜†


I did some cooking the day before and some more preparation in the morning, relaxed, not stressed out at all, I even took a nap from 3-5 when guests were supposed to come at 6PM! πŸ˜‰


we had plenty of drinks, mostly alcoholic though πŸ˜‰


when guests started to arrive, I put the appetizers out


in less than an hour, most of them arrived and they surrounded the food table for a long while


I was running back and forth before dining room and kitchen, stopping between crowds of friends…. how lovely~~~~~




the star of the night was Argentinean empanadas, a classic party food


I baked some pork loin with bacon and rosemary


made a dip with feta, greek yogurt and sun dried tomato

a friend from Armenia brought a traditional salad made with beans and beets


I also made sweet potato casserole with marshmallow

empanadas were “sold” out quickly… I made several batches to feed the crowd


forgot to take pic to the pork loin, the side dish for it was rosemary glazed carrots




we had 3 pies. I made this one which went out very quickly, pecan chocolate pie

some of my favorite people in the US! I love them so much and I feel they’re becoming family!!! πŸ™‚

Yesterday was also Star’s 35th birthday… we celebrate it with cake and champagne while playing ping-pong until 3:30AM with our closest friends!!! 😯 YEAH~~~ It was a long night, but such a good one!!!

As tradition to this holiday… I need to say I’m thankful for having all these amazing friendsΒ in my life, without them my life would be as colorful and joyful as it is. I’m also thankful for having my parents healthy and here with me, they are so important to me. Lastly I’m thankful for having Star in my life, he’s the angel sent by God to take care of me, to protect me and to do everything in his power to make me happy. πŸ™‚
