Inspirations & Giving 2nd chance to goat cheese

Someone asked me where do I get inspirations. Basically from what I read and watch. Last night I watched Invictus (Oscar nominee). If you haven’t seen it, see it! It’s amazing. Big ideas, big persons.

Saturday’s FT is my favorite.

In special, the interview article. This week featured one of my favorite writer: Paulo Coelho. If I have to resume in one sentence what his book is about? Well… I’d say: We can change our lives. Our limit is where our mind sets it.

Bottom line: We can’t have it all! We can’t be a successful woman, a perfect wife and mother and have an impeccable house. The fact that there are more men in the high position in the business world is not because they’re more capable than women, but ย because women chose to prioritize family life!

Currently I’m prioritizing work over everything else. While my code was running, I gave a second chance to goat cheese. I made portabella mushroom “pizza” topped with goat, parmesan cheese and tons of italian seasoning.


MUCH BETTER!!! ๐Ÿ˜† I am still not loving it, but definitely enjoyed much more than first time. I guess the tomato, italian seasoning helped a lot!



to fill up the mushrooms I made a paste with silk tofu, nutritional yeast and tahini. Random but good.

And then, more random creation: almondie-mousse (almond butter + silken tofu + flax meal)


it was surprisingly good! Smooth and strong in almond butter! ๐Ÿ˜€

Lastly was the cleaning fridge kind of stir fry + chicken breast marinated in mustard curry sauce.

Sunday will be half work work half house work. Laundry has pilled up, kitchen requires immediate cleaning and fridge needs to be restored. Oh.. Gosh… I need a maid.

New makeup & New flavors

Yesterday after 4 hours of intense work, I took a break to Macy’s and got these. A new foundation for normal to dry skin and a liquid eyeliner.


I like a lot Sephora’s mineral makeup but I find it dry for winter, so I got this. And the eye liner…. just because ๐Ÿ˜‰

And the reason I got these NOW is because there’s a good deal. Spending more than $55 you’ll get all these free samples!!!


oh… and I finally found my beloved chocolate. Dark chocolate with a touch of sea salt! The store had 3, so I grabbed them all. ๐Ÿ˜‰


After a quick lunch I went to my advisor’s home. It was a good meeting but it put more weight on my shoulder ๐Ÿ˜ฆ because that means I have to speed up everything even more! All my committee ย members are finally satisfied with my topic and model, so now I just have to work hard and put everything in one piece.

Into the new flavors. Not new flavors by itself, but new mix of flavors. Remember this curry mustard? I almost forgot about it.


I used it to bake salmon.


and it tastes amazing! I think I have never had a curry salmon… it’s such a unique flavor. Love it! ๐Ÿ˜‰

and fish sauce, not new either.


but I used it for veggie stir-fry! ๐Ÿ˜† at the beginning I was a little skeptical… will it taste funny? probably. Whatever, I’ll just try.


I used 1-2 tbsp of the fish sauce, 2 small zucchinis, 1/4 onion and some black fungus and shitake mushrooms. I couldn’t taste the fish sauce itself but it was tasty, so nice try!

Good news: I slept 8 hours per night for the last three nights! ๐Ÿ˜€ It feels soooo good!

Call me tea lady & more GIVEAWAY!

How many teas do you drink in a day? 2-3? I had 4 in BIG jar form ๐Ÿ˜€ So, call me TEA lady girl. No rambling today because I have a lot to show ๐Ÿ˜€ Okay, just one thing, work went well yesterday ๐Ÿ˜‰

Looks my oatmealย tin(Star bough me from Argentina). It has its own spoon attached. Isn’t it cute?

Breakfast: peanut & flaxmeal oats. I’m running out of nut butter and don’t want to make another batch since I’m leaving the country in โค weeks. So, I’m adding 2-3 tbsp of flaxmeal to my oats lately.

I got 3 packet of Fitnutz powdered peanut mix as sample. I didn’t make PB with it but throw the packet directly to my oats. It has a good peanut flavor, but nothing too special. I might have to try it in another form.

Tea 1 was Kusmi‘s Sweet Love (Black China tea, liquorice roots, spices, guarana seed and pink pepper). I received a big batch of their teas few weeks ago.

They have a big selection of teas. I’m specially intrigued by the Russian Blend. Sounds exotic right? Sweet Love is a melange of spices. (French makes everything sound so elegant ;)) I could taste some spices, but not strong enough. Maybe it was because the tea bag is pretty small and I put it into a big jar. I’ll try using 2 bags next time.

I got this package from Campbells V8 Soup just before dinner time


they not just sent me soup, but also a pedometer, a health log and a reusable bag. I guess the message is that their products are in line with a health lifestyle!

Garden Vegetable Blend

With 12 different vegetables and a flavorful, hearty base, this is a robust take on vegetable soup. No artificial flavors. No preservatives. Just the delicious, vibrant taste of a full serving of vegetables with the nutritional goodness that goes along with it.

Nutritional info: One cup contains 1g of fat, 480 mg of sodium (20% DV), 3g of fiber (12% DV), 7g of sugar and 5g of protein. Not bad at all, right?

I’ll be honest, I’m not a package food person, most of my meals are homemade and I had the idea that ALL package food is BAD. Well… I just realized that I was too judgmental. Their soups have no preservatives and artificial flavors, so the main bad things about packaged food aren’t in these boxes. Maybe not all packaged food is that bad ๐Ÿ˜•

I used one serving and added more veggies (broccoli and mushrooms) and tofu to make it as a meal, served with crackers.


Taste? AMAZING!!! They don’t taste artificial at all and it’s delicious! I don’t usually like potatoes, but they were the star in that soup, making it so creamy!!! Coco’s rating: 5/5. I’ll definitely buy it in the future. Obviously if I have time and be able the find the good mix of flavors to recreate its taste, I’ll still make my own soup. But if I’m short on time and want something tasty, I’ll go for these.

Tea 4: My all time beloved Sweet Coconut Thai Chai


Dessert was white fungus drink & steamed kabocha (sorry Maggie, I just can’t live without it! ;))
