Food: what we’ve been eating

Let’s see how I am fueling for Sofia during the last two weeks. I think I gained a little room in my stomach as Sofia has dropped. And I want to deliver a normal weight baby (6-7 lbs), so I’m eating with all my abilities despite lack of appetite. My mom is doing a great job on preparing dinners that are varied and nutritious.

For breakfast I’ve been having this mess combo that I like quite a lot. Chocolate almond milk

Last weekend I prepared a dinner for the photographer of the maternity pics.

Last weekend I baked some chocolate-nuts cookies for Star’s breakfasts. He likes it a lot! πŸ™‚

Chocolate Nuts cookies (2 dozens)

  • 2.5 cups old fashion old meal, grounded
  • 1 cup all purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup regular sugar
  • 1 stick butter
  • 2 large eggs
  • 2/3 cup chocolate chips
  • 1 cup assorted nuts (I used walnuts and almonds)
  • 1 tsp baking powder
  • 1/2 tsp salt

1. Mix dry ingredients (oats, flour, baking powder, salt)

2. Beat sugar with butter, add eggs

3. Combine dry with wet and add chocolate chips and nuts.

4. Make balls and bake for 25-30 min at 375F.

Weekend happening: sleep, eat, gym and repeat

The past few days were total relaxation. Due to Star’s luck of sleep on his business trip, all he wanted to do is to sleep (day and night)! AsΒ Erin would say:” Yes, my lord, sleep we’ll do! πŸ™‚ Other than the 5k race on Saturday’s morning and my dearest friend’s birthday party at night, we just stay at home and relax.

I finally convinced Star to join my beloved gym! He’s been sedentary for more than a decade. I encouraged him to exercise more but always failed until now. He has turned 34 few months ago and it became mandatory for health purpose to start exercising, specially with his propensity to have diabetes (his mom has it). So, now he has committed to go to the gym whenever he stays with me (hopefully >3 days a week). So far he’s liking it and I like it even more!!! Because now I don’t feel bad to leave him at home alone when I go to the gym~~~ πŸ˜†

While he takes long naps… I bake πŸ˜‰

for my lord: peanut butter cookies with homemade PB

I used roasted peanut with sea salt. Ground 7 min and done! Nothing else, just peanuts!!!

beat 100g butter with 80g of sugar and 2 eggs

once it becomes white, add 100g peanut butter

add 200g flour

and 1/4 cup of sesame seeds

bake at 375F for 20 min.

Other eats:

noodles with bok choy, eggs and olive preserved olive leaf

I’ve started to make nutritious soup that takes >4 hours to make. I made black chicken soup with assorted chinese herbs on Saturday and this one on Sunday.

this one has pork feet, black beans, shiitake and red dates. I made sure to take out most of the fat from the pork feet, so what’s left is the collagen. Collagen = beauty weapon against saging!!! All asian girls know that πŸ˜‰

If you excuse me, I need to look how the bread-making is going and to prepare lunch for my lord. hahaha… That’s how I feel today, most of the days I feel like the queen and he my loyal servant πŸ˜‰

Q: Are you a soup person? What’s your favorite soup? I’ve never been a soup person, but my acupuncturist told me that soup is good, specially for people with weak digestive system, so more soup for both of us!

Slipping away from Petit Macro: cookies?

After the amazing meal the night before… I woke up with a belly discomfort. I don’t know if it was due to eating too oily pasta sauce (blue cheese and walnut sauce) or that I had too much of my beloved homemade breads…. I was bloated even after 8 hours 😦 So, a macrobiotic breakfast was no than needed

for lunch I had leftover chickpea millet cake with tofu tartar sauce, steamed veggies, roasted pumpkin seeds and more edamame

I finished writing the first draft of my job market paper. YAY~~~ πŸ˜† To celebrate I went for a run! A short one, just 4 miles but it wasn’t a pleasant one. I got a knee pain after 15 min into running, I tried to walk a little bit to stretch but the pain didn’t go away, so I ignored it and continued. Now I can’t walk straight 😦 I googled and found that my symptoms resembled to IT Band Symptoms. Any one had this? Β Any tip?

Anyway… back home. I wanted to bake something… what? more bread? nop… too time consuming. I wanted to bake something that is easy and fast. Okay. Cookies!!! You know that I don’t have sweet tooth and I almost never eat cookies. But yesterday I kind of wanted one, so I made Peanut Butter Cookies

Ingredients:

  • 1 1/4 cup APF
  • 1 tbsp baking poweder
  • 1 tsp salt
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1 egg
  • 1 stick butter room temperature
  • 1 cup homemade peanut butter (blend 2 cups of roasted peanuts for 10 min)

Method:

  1. mix flour, salt and baking powder
  2. use a hand mixer to mix PB, butter, sugar and egg until fluffy
  3. combine 1 and 2 and let it rest at the fridge for 2-3 hours
  4. form balls with hands and flatten it
  5. pinch the cookies with a folk
  6. bake at 350 F for 10 min

It’s sooooo good!!! πŸ˜† Soft, crumbly, tasty and it almost melts in my mouse! hehehehe…. it’s the power of the butter I guess. And the most awesome part? it’s incredible easy to make!!! I said I just wanted one… so who am I suppose to do with the rest of the batch? feed the man!!! πŸ˜€ YAY~~~ Star’s coming back today!!!

As you can see… I don’t follow the plan strictly… I’ve been slipping away quite often, which is totally fine for me because I’m only doing it for fun! πŸ™‚ I am also pausing it during the weekend so I can spend more time with my hubby πŸ˜€
