Perfect rice!

I’m in love with my new kitchen toy: theΒ rice maker. It makes the most delicious brown rice ever!!! πŸ˜†

I have three delicious meals to share today, so let’s start. πŸ˜‰

Breakfast: fage + aduki beans + coconut butter.

It is delicious and filling. Coconut and aduki is a magic combo. It reminds me theΒ aduki aduki mousse.

Lunch: mashed cauliflower + baked salmon + sauteed mushrooms

IMG_9668.JPG

mashed cauliflower: 1/2 head of steamed cauliflower, 1 tbsp butter, salt, pepper and 2 tbsp of almond milk. I don’t like mashed potatoes, but I love this! πŸ˜€

And the brown rice. 1 cup of brown rice, fill water just at the 1 cup line for brown rice

choose brown rice option

about 2 hours later.Β the best homemade brown rice ever!!! And I didn’t even soak it! 😯 I was really amazed. Usually I’d soak the rice over night and still don’t get this. I’m soooo happy with this purchase. Thank you,Β Maggie.

and then I wanted to recreate the squash tofu that I had inΒ Soeun

IMG_9678.JPG

I forgot the tofu and used only veggies that I had: 2 mini eggplants, chinese cabbage, broccoli and kabocha

IMG_9681.JPG

steam it for 10 min while I made the sauce: white miso paste (1/4 cup), tahini (2 tbsp), ginger and garlic

IMG_9682.JPG

all to the food processor + 1/2 cup water

IMG_9687.JPG

done

IMG_9690.JPG

heat the sauce in a wok

IMG_9691.JPG

add steamed veggies

IMG_9692.JPG

cook for 5-10 min until veggies are done.

Serve

Dinner: veggies in miso-tahini sauce served with brown rice

It was really good (although still not as good as Soeun’s). I enjoy it so much! πŸ˜† I thought I didn’t like rice anymore… I was wrong. Now I want to eat rice everyday!!! πŸ˜†

Q: Have you re-fall in love with any food recently?

Panic attack & a new breakfast combo

I had a PANICK ATTACK this morning!!! 😯 A very serious one! I wanted to dig a hole and stay there for a week! 😯

The combination of hating clutter in my computer and being disorganized is almost an insurance to LOSE important files in important moments! πŸ‘Ώ I’m a week away from presenting my job market paper and I realized this morning that I mis-deleted some IMPORTANT files! :opss: I deleted them PERMANENTLY, even those that were in the backup disk! πŸ‘Ώ I really wanted to kill myself. I called Star crying… I text msg Maggie desperate, I even call a file-recovery company to see if there is any solution.

BUT…… I found the rescue…. I realized that I’ve sent a copy of all the files to myself like months ago! πŸ˜†

Lesson learned: NEVER EVER DELETE ANYTHING!!!!

*******

Now to the more happy note of this post. I made a new breakfast combo that I LOVE πŸ˜€

IMG_9452.JPG

Ingredients: 1 medium yam, 1 fage 0%, 2 figs and homemade coconut butter

IMG_9441.JPG

cut everything in bite size

IMG_9447.JPG

stir the coconut butter. I added additional coconut oil to make it really smooth

IMG_9450.JPG

assembled πŸ˜€

each bite is scrumptious!!!

Last night Savanna came to sleepover and we went for dinner to my new favorite restaurant in the neighbor

DSCN0253.JPG

I had a oriental tofu and triple color slaw with a miso-ponzu sauce

DSCN0257.JPG

served with bread

DSCN0260.JPG

and Savanna had open faced sandwich with avocado and turkey (?)

DSCN0262.JPG

We both enjoyed our meal but not satisfied 100% until we had this: Mini duo mousse

Delicious~~~~ Love the texture and the slightly bitter taste.

Finally… I need your help. Can you help me on organizing this cord-mess?

two cameras chargers, data cords, cellphone chargers and 3 laptops chargers. I don’t know how to organize them? How do you organize all these cords?
