Food: 菠萝包 pineapple bread & banana bread

Yesterday I attempted to make pineapple bread with no pineapple. It’s a popular bread in Asia. I think it is originated in Singapore.

This is the end product.

The bread is slightly sweet and the crust has a mild butter flavor. My parents like them a lot! 😆

Pineapple bread or Bo Luo Bao

For the bread:

  • 120g water (room temperature)
  • 1 egg, beaten
  • 20g butter, melted
  • 25g sugar
  • 1/4 tsp salt
  • 250g flour
  • 1 tsp yeast

For the crust:

  • 30g butter
  • 30g powdered sugar
  • 1/2 egg, beaten
  • 1 tbsp half and half
  • 1/4 tsp salt
  • 50g flour

Method:

1. Make the dough for the bread with the bread man dough cycle

2. Make the crust by mixing the ingredients in that order and put the dough in the fridge for 60 min.

3. Once the dough is ready, separate the dough into 7 balls and cover it with 1/7 of the crust dough.

4. Let it rise for 60 min in a warm place

5. Bake at 350F for 25min

I love love love fresh baked breads! They always smell amazing and look cute (to me ;))

I also made banana bread for mom. Although she loves pound cakes, they are too high in butter, so I made her banana bread instead and replaced half of the butter by banana.

Food: Tjs and easy banana bread pudding

I had an empty fridge last weekend so a trip to Tjs was on the top of my to-do list on Monday. I had the intention to pick up just few things to “survive” until Thursday (my mom arrives!) but I ended up with two full bags and a lot of new items

IMG_2615.JPG

One bag of veggies: two bags of salad greens, apples, eggs, yellow and orange peppers (love these!), mushrooms, onions, cauliflower, pearl tomatoes, broccoli, endive, cucumber, green peas and shredded cabbage.

IMG_2617.JPG

and these: many of these are new to me and I’m excited to try them

IMG_2621.JPG

This would be perfect for salad

IMG_2622.JPG

old favorite to make tortilla pizza

IMG_2623.JPG

my all time fav

IMG_2624.JPG

I want to cook Thai at home (too)

IMG_2625.JPG

I love hearts of palm, they are so delicate

IMG_2626.JPG

Thai sauces

IMG_2627.JPG

I haven’t had chicken for more than 6 months , surprisingly I want to have some now 😉

IMG_2629.JPG

I couldn’t wait to try to test the sauce. Saute veggies and tofu with some canola oil for few minutes

IMG_2631.JPG

and this sauce

IMG_2632.JPG

1/4 cup per serving according to the label

IMG_2634.JPG

cooked some millet

IMG_2645.JPG

I love the color of this meal

IMG_2643.JPG

it was SOOOOOO TASTY!!! The sauce is exactly what I was looking for. It tastes gingery, coconut and a little spicy, very thai 😉 I might add more red peppers next time because I want it to be really spicy!

I had four slices of this bread and 2 frozen bananas in the freezer for a while. For some reason I haven’t craved bread for breakfast the last two weeks. So I throw them together for a easy banana bread pudding.

Easy Banana Bread Pudding

  • 4 slices of WW bread
  • 2 large bananas
  • 2 eggs
  • 2 tbsp coconut oil
  • 1/4 cup unsweetened apple sauce
  • 1/4 cup coconut milk
  • 1/2 cup milk (I used Almond milk)

Steps:

1. Cut breads into cubes.

2. Mash bananas with a spoon and add all the liquid ingredients

3. 1+2 and bake at 370F for 50 min

Really simple, right? But it was great! It’s naturally sweetened and perfect for someone who doesn’t have a sweet tooth. I made it on Monday afternoon and it’s all gone!!! 😆

Q: What was the last new grocery item you got and you love it?

Food: after a short hiatus……

After that dinner I didn’t cook for four days! I’d eat out or I’d spend <5 min to prepare a meal. Like this one:

frozen spinach, tofu, brown rice pasta and parmesan all mixed and bake for 15 min

IMG_1981.JPG

IMG_1983.JPG

frozen spinach, hummus and smoked salmon in tortilla

IMG_1984.JPG

and one without salmon

IMG_1985.JPG

It was simple but quite tasty

As the weather gets warmer, I crave salad. The other day I had lunch with a friend at Mai Thai and she recommended me to have the avocado salad. Oh… my goodness! How did I forgot avocado? I like it soooo much!!! So the next day I got a salad at Sweet and Green with double avocado as topping. It made everything soooo delicious!!!

Love “working on a salad” and watching TV.

On Thursday I finally felt cooking again. I used brown rice flour to make this banana bread.

IMG_2016.JPG

so simple but really really good. I ate the half batch in <24 hrs 😯

IMG_2019.JPG

and I made bread

IMG_2033.JPG

Whole Wheat with Flax Seed

  • 2 cups water
  • 2.5 cups WW flour
  • 1 cup rye flour
  • 1/4 cup flax seed, grounded
  • 1.25 tbsp yeast
  • 1 tsp salt

IMG_2036.JPG

I really liked the cannelloni that I prepared that night so I made some more for myself. I used almost the exact recipe, except that I used WW flour for the pancakes, and I added tofu in the filling.

IMG_2023.JPG

2 batch to the freezer and 1 batch topped with tomato sauce

IMG_2028.JPG

A salad made with butter lettuce, spinach, yellow peppers and smoked salmon with carrot ginger dressing.

IMG_2032.JPG

finally a good dinner!!! 🙂
