Food: meals of the week

I’m having a lot of fun trying new dishes lately, I guess you’re enjoying reading them, aren’t you? 😉

Stir-fry veggies (onion, brussel sprouts, asparagus, spinach, tofu) with Tj’s thai sauce, served with brown rice

I used to love this sauce, I could eat it everyday, so I got it again. Unfortunately I was not obsessed with it this time.

笋烧肉 (red sauced pork with bamboo), my mom’s favorite

black chicken soup with black fungus and shiitake mushroom, a very nutritious soup that I have at least once a month.

I’m loving rice with soup lately. I’m not usually a soup person, but I’ve been asking for more soup to mom lately! Sometime, I even feel I can’t have a meal without soup. 🙂

After that meal, I had 2 times of this: 1 bowl of one-pot meal cooked with shredded chinese cabbage and chili sauce (菜泡饭). I’m in love of this combo!!! I had at least 5 times over the last two weeks and still want more.

Food: Chinese food with African friends

It seems that we need an excuse every week to have friends come over for a meal! 🙂 I love hosting friends and cooking, so I guess once a week is a minimum!

Last Sunday we invited Sarah and her husband Bami to come over for dinner. Bami is a photo-taking addict, he just enrolled into a year long course!

Q: How often do you get to see your friends? I’m lucky to have friends who work closeby if not in the same organization I am, so I see them in a weekly basis, some even daily basis! How lucky I am!!! 😆

Perfect rice!

I’m in love with my new kitchen toy: the rice maker. It makes the most delicious brown rice ever!!! 😆

I have three delicious meals to share today, so let’s start. 😉

Breakfast: fage + aduki beans + coconut butter.

It is delicious and filling. Coconut and aduki is a magic combo. It reminds me the aduki aduki mousse.

Lunch: mashed cauliflower + baked salmon + sauteed mushrooms

mashed cauliflower: 1/2 head of steamed cauliflower, 1 tbsp butter, salt, pepper and 2 tbsp of almond milk. I don’t like mashed potatoes, but I love this! 😀

And the brown rice. 1 cup of brown rice, fill water just at the 1 cup line for brown rice

about 2 hours laterthe best homemade brown rice ever!!! And I didn’t even soak it! 😯 I was really amazed. Usually I’d soak the rice over night and still don’t get this. I’m soooo happy with this purchase. Thank you, Maggie.

and then I wanted to recreate the squash tofu that I had in Soeun

I forgot the tofu and used only veggies that I had: 2 mini eggplants, chinese cabbage, broccoli and kabocha

steam it for 10 min while I made the sauce: white miso paste (1/4 cup), tahini (2 tbsp), ginger and garlic

all to the food processor + 1/2 cup water

heat the sauce in a wok

cook for 5-10 min until veggies are done.

It was really good (although still not as good as Soeun’s). I enjoy it so much! 😆 I thought I didn’t like rice anymore… I was wrong. Now I want to eat rice everyday!!! 😆
