Recipe: hot turkey chickpea soup

hot turkey chickpea soup (4 servings as meal)

  • 1 medium onion chopped
  • 4 stalks of celery chopped
  • 1 orange bell pepper chopped
  • olive oil
  • 6 trader joe’s turkey meatball
  • 4 cups of chicken stock
  • 1 lb. kabocha cubed
  • 1 can of diced tomato
  • 6 cups spinach
  • 2 cups chickepeas
  • 1 cup okara
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp red pepper
  • S+P

1) heat oil and sauteed onion and celery for 5 min

2) add bell pepper, kabocha and cook for 5 min

3) add tomato, stock, meatball, chickpeas and simmer for 1 hr.

4) add spices and okara and cook for another 10 min.

5) add spinach, season with S+P.
