Recipe: chocolate protein pancake and quick berries jam

Chocolate protein pancake for 1

  • 2 Tb coconut flour
  • 2 Tb protein powder (I used Sun Warrior vanilla)
  • 1 Tb cocoa powder
  • 1 tsp baking powder
  • 1/4 c. pumpkin
  • 1/2 c. almond milk
  • 1/4 c. egg white
  • 1 Tb apple cider vinegar

1) Mix all dry ingredients

2) Add pumpkin mix well

3) Add egg whites, mix. Add other liquids (except ACV) mix.

4) Add apple cider vinegar immediately before pouring onto frying pan.

Berries jam

  • 250 g frozen blueberries and raspberries
  • 2 Tb chia seed
  • 1 Tb lemon juice
  • 1/4 tsp stevia extra
  • 1 Tb water

1) Pour everything into a pot and boil

2) Simmer for 15 min
