Sunday morning food preparation. This time involved preparing for Sofia. I made a batch of zucchini-pear-baby oatmeal. It was really easy, just steam zucchini and pear for few minutes and blend everything. Sofia liked this combo, she ate a bowl of it right away! 🙂
Last week I brought sandwiches from work for mom and really loved the bread. So my mission was to recreate it and make it healthier.
Whole wheat buns with sunflower seeds:
- 1 1/3 cup water
- 1 Tbsp oil
- 3 Tbsp honey
- 2 cups bread flour
- 1 cup WW flour
- 1/2 tsp salt
- 2 1/2 tsp yeast
All into the bread machine, choose the dough cycle, form the buns, let it rest for an hour in a warm place (oven with light on), brush with egg+water, top with raw sunflower seeds and bake at 380F for 15 min. Viola. Soft, spongy buns with some crunchiness.
For lunch we had baked salmon with salads.
I made a batch of vegan thousands islands and I love it!!!
Vegan thousands island dressing
- 1/3 cup silken tofu
- 1/4 cup ketchup
- 1/4 cup sweet pickle relish
- 1 Tbsp garlic powder
- 2 cup olive oil
- 1 Tbsp mustard grains
- pinch of cayenne pepper
- 1 tsp salt
- 2-4 Tbsp water
Blend all the ingredients and serve.

I love that she’s been smiling more often lately. Sometimes even after an hour of crying/protesting, the moment I pick her up, she’d smile to me like nothing happened.

she’s definitely having fun. It’s amazing how much fun and happiness I get just by looking at her playing with it. The wonder in her look is the most amazing I’ve ever seen. I’d do anything to keep that look FOREVER! 🙂
