Chinese smoke chicken 茶香熏鸡


  • 1 whole chicken (4-5 lbs.)
  • salt
  • chinese pepper
  • 1/4 cup tea leaf
  • 1/4 cup rice
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 tbsp of aniseed
  • 2 stalks green onion
  • 3 in. ginger
  • 4-5 dry shiitake mushroom


1. Marinate the chicken with salt and chinese pepper for few hours


2. cut the green onion and ginger


3. stuff green onion, ginger and dry shiitake into the chicken


4. Mix the rest of the ingredients in a baking pan folded with aluminum paper


5. put the chicken over a baking rack


6. seal it VERY well. Do not let any air to come out.


7. Bake at 415F for 3 hrs.
