A short and sweet weekend.
Saturday: pancakes to start the day
protein oatcakes: 1/3 c. oats flour, 1/3 c. cottage cheese, 2 egg whites, 1/3 c. pumpkin, 1 tsp. baking powder, pinch of stevia
PB2 sauce and maple syrup. YUM!
For lunch we went to a thai restaurant. Someone was sleepy because morning nap was crappy.
mom and I shared gonza as starter.
Sofia was entertained with the paper
mom’s entree: spicy sauteed seafood with green beans
I had the seafood rice noodle bowl with a pink broth.
Then we did groceries. And just before sunset, we went out for a walk. It’s so much better now that Sofia sits in the stroller. 🙂 She enjoyed the walk as much as we do as she can see everything.
Sunday: another pancake for breakfast
made with 1 small banana, 1 whole egg, 1 egg white, 2 tbsp coconut flour, 2-3 tbsp almond milk.
the addition of coconut flour made the pancake even tastier and fluffier. Love it!
Morning spent at the kitchen doing food preparations. Baked a sandwich bread for mom
this time I added whole wheat flour, and it came out soft, moistured, perfect for sandwiches.
Whole wheat sandwich bread:
- 1 cup water
- 1/2 cup almond milk
- 3 tbsp sugar
- 1 tsp salt
- 2 cups all purpose flour
- 1.5 cups WW flour
- 2 tbsp vital gluten
- 2.5 tsp yeast

Mom’s: chicken thigh, salad with iceberg lettuce, carrot, green peas and corns with Thousands Island dressing.
I’m trying to make my mom to eat more veggies. She’s aiming for 4-5 salads a week. 😉
Mine: chicken breast + green salad with roasted cauliflower
Spent the afternoon watching dollhouse.
