One good dinner I had last week: kale goat cheese frittata with red quinoa, steamed cauliflower with asparagus

Review: It’s crunchy and crispy but taste wise is just so so. Will not repurchase it.

I am giving up dairy so this week I picked up Almond milk yogurt.

Review: it’s BAD people! It has nothing to do with yogurt, it’s not sour, the texture is like a gelatin and it tastes so weird. I won’t toss it away, I’ll just mix it with pumpkin and PB2.

I also got a coconut milk creamer to bring to work. I like to have a decaf coffee after lunch and the half and half that we have at coffee station is tasteless.

Review: it’s actually very good. It’s creamy, it has a hint of french vanilla mixed with coconut. Will definitely buy it again. 🙂

Next week’s menu:

Breakfast: steel cuts with protein powder, cottage cheese, frozen blueberries and PB. Still loving it.

Lunch: salad (spring mix, tomato, cucumber, mushrooms), roasted pepper, eggs, avocado and tofu. Dressing: hummus/cider vinegar/nutritional yeast/red pepper/lemon juice.

Dinners:

  • Monday: roasted chicken + salad
  • Tuesday: tortilla pizza (broccoli slaw, roasted pepper, tahini-nutritional yeast “cheese”) + kale salad
  • Wednesday: sautéed brussel sprouts, celery with chicken sausage
  • Thursday: broccoli slaw with a creamy tofu sauce + sauteed sugar peas

  1. The kale goat cheese frittata sounds so good! Must try that one. Thanks for the reviews, too. I’ve seen the almond yogurt around here and now I know to keep it at the store!
