Food: low sugar pound cake and muffins

Last weekend I baked two goodies for my parents. They both like sweet breakfast (I don’t) so I bake them as much as I can when they’re here.

For me healthy cakes are those that have high fiber, low sugar and healthy fats. With that in mind, I make two goodies for them

#1: Low sugar fruity pound cake

  • 150g all purpose flour
  • 75g WW flour
  • 50g sugar
  • 2 eggs
  • 180g milk
  • 75g coconut oil
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup raisin
  • 1/4 cup pecan
Mix dry ingredients and liquid ingredients separately first and then mix them together, bake 30-35 min at 350F

#2: Sugar free raisin muffins

using the same recipe above but replace sugar by baking stevia, and add more raisin (1/3 cup) and omit pecan. The result is as good as the previous one. You can’t taste anything weird! 🙂

  1. i def prefer savory breakfasts but if i’m in a hurry, i will drink a (sweet) vanilla or chocolate protein shake.

  2. Looks delicious! I love a sweet breakfast, but not too sweet (donuts are too sweet, definitely) but I also like savory breakfasts on occasion (usually weekends).

  3. I prefer breakfast to be on the sweet side….

  4. I want a slice of the pound cake right now! Looks delicious! But I usually prefer a savory breakfast. “Flavored” rice, veggies, and over-easy eggs is one of my favorites!
