Food: recent baking adventures and recipes


Last weekend I had a marathon baking afternoon! ๐Ÿ™‚ It was so much fun baking three things at the same time!

#1: cashew biscotti

It was my second time making it because the first time was so successful that they finished the whole batch in two days! ๐Ÿ˜†

Cashew biscotti:

  • 1.5 cup chopped cashew
  • 1/2 tbsp baking powder
  • 1/4 tsp salt
  • 3 cups all-purpose flour
  • 1 cup white sugar
  • 2 large eggs
  • 3 tbsp butter melted
  • 1 tsp vanilla extract
Method:
1. Mix egg, butter and sugar with a mixer until smooth
2. Add vanilla
3. Add flour, salt and baking powder
4. Add chopped cashew.
5. Leave it in the fridge covered for 30 min.
6. Make a square paste and bake 20 min or until brown at 350 F.
7. Take it out from oven and cut it. Bake it again 10 min each side until brown.

#2: Sandwich bread

My parents have been enjoying homemade breads since their arrival. This time I used some Whole Wheat Flour to make it healthier.

Sandwich bread:

  • 225 g water
  • 35g sugar
  • 30g butter
  • 75 g milk
  • 300g white flour
  • 100g WW flour
  • pinch of salt
  • 1/2 tbsp yeast
Put everything in that order into the bread maker and let it work on the dough. Then rise for another 45 min in the baking pan. Bake at 350 F for 30-40 min.
#3: Cinnamon Swirl Cake

I cheated on this one because I used a cake mix (bought by mom). ๐Ÿ™‚

  1. This makes me want to bake, now! The last thing I baked was cookies, about a month ago. Also pepperoni bread. Nothing as good as that cinnamon swirl cake, I’m sure!

  2. hubba hubba everything looks delicious! I love how you always make homemade sandwich breads and loaves.

  3. The cinnamon swirl cake look so tasty! I baked a few cheesecakes over the holiday’s as well as some sugar cookies. All delicious!
