#2: How was your Easter weekend? I bet you had great time! Weather was amazing, just like summer! šŸ™‚ I don’t have family to celebrate it, but I did spent time relaxing, meeting new and old friends! šŸ˜€ Once again, I feel easier to be approached or to approach boys than girls! I don’t know… it’s just simpler, period. But there’s downside on this too, specially when we become good friends. šŸ˜¦ I went out with two guys friends yesterday. We’ve been friends for 4 years and they consider me part of their clan, so no forbidden topic when I’m present. What I had to hear all afternoon? their adventures with girls!!! YES! All we they talked about was GIRLS, their adventures with all the dirty details!!! Well… it’s fun to hear that sometimes, but not for 3 hours!!! šŸ˜Æ

#3: It’s official, I’m a gluten free bread convert! I love love love this bread!!!

Coco’s version

Ingredients: 1 large tomato, 1/2 onion, 1/2 lime juice, 1 stalk of celery, 1/4 bell pepper, S+P, italian seasoning, 1 tbsp olive oil

    i’m excited for this beautiful weather! i’m making my first garden so i can have plenty of fresh veggies this summer/fall šŸ˜€ i love boston, such a young & fun city! enjoy!

    Wow that many hours talking about girls would probably drive me nuts! You’re a trooper!
    I’m not looking forward to this weekend. I have a term paper due a week from today so I’m sure the weekend will be spent doing that.

    i actually find it easier to be friend with girls, even though there’s lots of drama sometimes. i don’t think i would have been able to hear about all the dirty details from the guys for 3 hours! haha glad you had a great weekend though! mine was spent working on my thesis :/

    i’m super busy as usual this week, so i’m not really looking forward to much, except that the weather is going to continue to be beautiful!

    I am looking into buying some Earth Balance spreads, but they have SO much variety, which one is your favorite in terms of flavor and nutrution?! I’m a copy cat. heheh You’re a TOTAL chef Coco, I think you should have your own restaurant and cookbook series!!

  11. This meal looks so perfect, and delicious. I LOVE mexican/spanish food. I always feel like I am eating something really good, yet with some health benefits (all those veggies, beans, and whole grains!).

    I’m glad you had a nice weekend with new and old friends, even if it meant you had to hear guys talk about girls. I’ve been through that before! I used to hang out with more guys than girls in high school and I learned a LOT about how men think!! It’s sort of helpful actually šŸ™‚
