J&J #17 & packages! :)

Yesterday was a quite productive day, worked 8 hours with minimum progress but I am okay with that. Not everyday must be a productive day! ๐Ÿ™‚ Just as I talked about friends yesterday, I had an unpleasant episode with a friend. I asked him something and he refused to give it to me (with good reasons). I couldn’t help but cry in that moment. It wasn’t a rational reaction because he has good reasons and I truly understand it. Maybe it was because I would give him if I were his place. Maybe it was just the accumulated emotions that needed an exit door. I didn’t think about it too much, put my sneakers and went out for a jog. 40 min later I was feeling great! ๐Ÿ˜€ That episode made me understand something: Don’t expect others to treat you always the same way you treat them. If he/she is someone you really care about, respect him/her, accept his/her virtues and flaws.

I got Bagel Thins. ย Although I’m not a bagel fan, nor Thoma’s thins, but I still like trying new products.

toasted it, microwaved white whites with LC and Earth Balance for spread.

I like the texture and the taste, but it was kind of too thin! I wasn’t satisfied so I had 1/2 more (not toasted) and spread with EB

I think I prefer it toasted! ๐Ÿ˜‰

J&J #17 @Eat Clean Cookbook: beet salad

IMG_6219.JPG

coco’s version: spring mix, 1/2 tomato, 1 beet, 1/2 apple. Original recipe call for kefir which I don’t have, so I used 1 tbsp olive + 1/4 cup soy milk + juice of half lemon + salt.

Fresh, sweet, sour and crispy~ Perfect salad. I think I’ve created a great salad dressing! ๐Ÿ˜‰

I have nothing planned for today. I don’t feel like working, maybe just lay down on the couch, I have few books and magazines to read! ๐Ÿ™‚ Relax is the goal! ๐Ÿ™‚

Q1: ย What’s your plan this weekend?

Q2: What’s your favorite pancake/waffle topping?

  1. My Mom used NuNaturals and loves them. I’ve never tried them before!

Sorry you had a rough convo with a friend. I hate it when that happens. However, remember, whatever doesn’t break you makes you stronger and I hope that your relationship can grow from this:)

  2. Both packages look awesome, I can’t wait to see what you try! I love how running can help clear the mind – sorry to hear you were having a hard time with a friend.

  3. I just picked up those Bagel Thins recently too–they take some getting used to, but I like ’em!
Favorite waffle topping these days is cottage cheese!

  4. The toddler has been hunting for Easter eggs all weekend, and we’ll continue tomorrow… ๐Ÿ™‚

Favorite pancake topping: warm berry sauce (blueberries, strawberries, raspberries).

    Have a good weekend!

  5. Great packages! I love any type of fruit as my toppings. They have to be warmed up, though.

No big plans for the weekend which is perfect! We all need some downtime around here.

    Love the beet salad!

  6. It’s great that instead of just thinking in your own perspective, you considered the other point as well, and dealt with your disappointment in such a healthy, mature way. ๐Ÿ™‚

Ack, not the bagel thins!! I’m a bagel snob, so haha, clearly not a fan!

  7. i bought those bagel thins today, but have not tried them yet. thanks for sharing your thoughts!

  8. Thanks for reviewing the bagel thins, I’ve been seeing them around a lot and wondering about them! Your salad looks gorgeous — even prettier than in the picture!

  9. It’s so true, I have been in many situations where friends/family/strangers have reacted to a situation in a way I never would. I don’t know what your friend wouldn’t give you, but it sounds like it was petty and he should have given it to you, I’m sorry to hear it made you sad ๐Ÿ˜ฆ

The beet salad looks so good. I LOVE beets! For Easter my grandma (who is no longer living) used to make pickled eggs and beets. I was the only one who ate them. I looked forward to them all year! I should make them myself sometime, ha, I never thought about it.
