I’m soooo EXCITED in spite of


I’m SUPER EXCITED and HAPPY that I’m leaving this afternoon!!! And by tomorrow morning I’ll be reunited with MARA, my best friend, my true friend, my soul mate, the girl that I love most on earth ๐Ÿ˜† in spite of

  • had to work until 5PM yesterday and work until 2PM today (just 10 min before leaving)
  • woke up at 3 AM this morning
  • got 3 rejections from friends that I asked to take me to the airport so I’m takingย super shuttle
  • got to know that I won’t meeting with my cousin in Germany because her daughter got swine flu

But despite ALL these, I’m still SUPER HAPPY!!! ๐Ÿ˜€ Life is a Seesaw, if we want to be happy, we have to give more weight to positive things. ๐Ÿ˜€

Breakfast: Kath‘sย oatmeal pancake topped with soy yogurt, PB and frozen peaches

Afternoon snack to kill my sleepiness ๐Ÿ˜• in my office: ย zucchini chocolate cake + coffee & soy milk

Dinner: poached salmon with soy sauce, tahini and garlic, steamed frozen veggies with couscous. My fridge is officially EMPTY!!!

  3. Poached salmon?? That looks so delicious! Mmm, and so does that strawberry dessert….yum!

    I can never sleep on planes, but I hear it’s best to bring your own pillow and for me it’s best to get a window seat so I can lean my head against the window!

    As for snacks, I always pack fruit and my granola. I pack healthy snacks because airports and airplanes don’t EVER offer anything healthy! It bothers me.

    Your pancakes look wonderful. I still haven’t tried spaghetti squash! I love salmon and fish too, all good stuff.
    It would be so interesting to learn more sometime about how you find the food culture differs from U.S., Argentina, China, etc…

  12. Have a safe flight and wonderful time! I take some melatonin to fall asleep on flights! It works wonders! I usually bring a bunch of bars with me too.

    To help me sleep on a airplanes, I like to bring my ipod and listen to relaxing music (something like soundscapes or Enya). I also like to bring an eyemask and a blanket. Hope this helps!

  14. Oh thatยดs so cool your visiting Germany! Hope, you have a great stay! Be sure to dress warm, as itยดs really cold over here!

    And be sure to eat lots of Lebkuchen and have some Glรผhwein, too, if your planning on visiting a Weihnachtsmarkt!

  15. Oh my gosh, have a great trip!! I studied abroad in Austria one summer and made a trip over to Munich. Germany is FUN. Ich liebe Deutschland!!!

    On international flights, they usually give you free alcohol, and that really helps me fall asleep! Also, remember to dress warm b/c the blankets in planes are really thin and it gets cold!

  16. Have an amazing trip! I usually just bring books to read and some good music on my ipod. Snack wise I always have containers of oatmeal handy (Never know when your gonna hit a big layover) some fruit and chopped veggies and bars. Easy to pack and filling! Have a wonderful time!!

    have a wonderful trip. i like to do crossword puzzles on planes, for some reason they put me to sleep. weird, b/c it should be mentally stimulating.

    OMG, I just LOVE Dr. Kracker, but I can’t find them anywhere!!! Total jealously. ๐Ÿ˜‰

    This sounds so weird, but I stuff a small pillow in my carry on, pull down the “pull-down table” on the seat in front of you, put the pillow on the table, and just bend forward and rest my head on the pillow. It sounds horrible, but it’s really the best position for sleeping on a plane that I’ve ever found.

    Don’t bring ANYTHING that might smell for a snack. Seriously, an air-tight plane is not the place to bring anything that might smell strongly… you and the people near you will thank me dearly. ๐Ÿ˜‰ Stick with granola bars, apples, raisons, trail mix, applesauce, carrot sticks, crackers, etc.

    I like to buy salads/sandwiches/larabars and eat them on the plane, since they don’t have a great selection. Just stuff you would usually snack on at home and is not too smelly (aka kimchi ๐Ÿ˜ฆ )!

  24. So excited for you!! You’re so worldly CoCo! My favorite flight snacks are a plenty!!! I like Luna bars, hard candies like caramels, and japanese rice crackers. delicious!!

  25. Yay for positive thinking! ๐Ÿ˜€ It’s amazing how much of a difference having a positive outlook makes. Your food is delicious and colorful, as always. My favorite airplane snack is carbs. ๐Ÿ˜• Being that high up in the air makes me lose my appetite for veggies for some weird reason, haha.
