banana loaf


This recipe is adapted from Kath’s chocolate walnuts banana loaf.

  • The Dry
    • 1 cups whole wheat pastry flour
    • 1/2 cup oat bran
    • 1/2 cup oats
    • 1/2 tsp salt
    • 1/2 tsp baking powder
  • The Wet
    • 2 large overripe bananas
    • 1 eggs + 1/4 cup egg white
    • 1/3 cup honey (optional)
    • 1/2 cup almond breeze
    • 1/3 cup chopped nuts

Mix wet. Mix dry. Mix wet into dry. Pour into loaf pan. Bake at 350* for about 45 minutes.
You can add nuts as the original recipe, but as I wanted a simple bread-like loaf, I skipped nuts and honey, although sweet enough for my taste.
