Food: two breakfast combos

I’ve been trying more sweet breakfast last week and I have to say, I enjoy both of these combos and plan to make them more often! :)

First, because they’re so pretty!!!! :lol: It’s a visual pleasure just looking at it.

blueberries pancakes with TJ’s european whole fat yogurt and strawberry preserves.

To made 5 mini pancakes, I use 1/4 cup of Bob’s Mill high fiber pancake/waffle mix, 2 egg whites (beaten) and 1/4 cup blueberries.

The second combo is an old one. Last weekend we bought a new waffle maker because I missed this combo

To make the waffles I used 2/3 cup Bob’s Mill’s high fiber pancake/waffle mix, 3 egg whites (beaten), 1 cup homemade soy milk and 1/2 tbsp coconut oil. It makes four waffles. I had two and freeze the other two. I love toasted waffles! :)

Trying to “celebrate” V-day!

I woke up at 7.30 AM (slept in at 3AM) telling myself: okay. It’s Valentine’s, without Star with me, I can still celebrate it and be happy by my own.

I got up, first thing to feel, terrible headache (not surprisingly :-?)

But I was determined!!! I made a yummy breakfast to boost the spirit!

For the waffles I used  3/4 cup WW flour, 4 tbsp flaxmeal diluted in homemade soy & peanut milk, 1 cup soy & peanut milk, 1 tsp baking powder, pinch of salt, vanilla/cinnamon.

It was DELICIOUS, so much that after breakfast I made two batches more to be freezed

Worked a little bit because I knew that would distract me. :-?

Another stir-fry soba for lunch. I love this meal for lunch, quick (<15min), satisfying and tasty! ;)

After lunch I did more thing to boost spirit. Groceries!!!

and I couldn’t wait to try lotus powder, it used to love it! :D

It is really simple to make, use 1/2 cup of the powder + 1.5 cup of hot water. DONE!

And then, I spent 1.5 h trying to pull my car out of the snow! IT WAS THE HARDEST WORKOUT in 2010 so far!!! My arms can barely raise after that. :evil: Snow, I curse you AGAIN!!! At the end, it was a nice guy who helped me out, otherwise I would have to spent 3 hours! I can’t even imagine that!

Exhausted, lying on the couch I thought: I need to exercise more! It’s not possible that I get soooo tired and sore after this.

Bottom line: I felt miserable in Valentine’s. Even I tried to tell myself that it is just a normal day, Star and I can celebrate it any day of the year. But I couldn’t fool myself, I was sad and lonely. :(

I believe…

I’m not a positive person by nature so I need to focus on being positive in a daily basis. This quote reminds myself something that I’ve always believed, everything happens for a good reason even if at the moment that it happens you can’t see the good part. :)

Life with too much snow is tough~~~ I became irritable, upset, anxious, depressed, etc. I need fresh air, I need human contact, I need move other than walking from bedroom to the kitchen, I need life outside!!!  Sorry people, I just need vent out!

Made a stir-fry soba noodles with shrimp, veggies and sesame seed. YUM~

It was done in <15 min, great meal for lunch! ;)

It was sunny outside so I invited Toutou to go for a walk to the near groceries store. It felt soooo good!!! :D Few things until Sunday (if I can pull out my car by then)

Brussels sprout is my new fav veggie for stir-fry and YAM to replace Kabocha for this reason.

Look what Toutou brought to me…. her very first homemade bread!

I devoured it in <2 min… so good! Soft and lightly sweetened! :) You’re talented, Toutou!

Another stir-fry with tahini, soy sauce and sesame oil. I’m addicted to this flavor… tahini is the best thing ever! I’ve been increasing its amount from 1 to 2 tbsp, 2 to 3 tbsp and finally 4 tbsp. Conclusion? The more, the better! :lol:

Q: What’s your weekend plan? How are you celebrating Valentine’s? It’s chinese new year tomorrow, all my family is celebrating it in China. I miss them more than ever! My hubby is in Argentina (with my Dad), so no Valentine’s for me either. But I’m not too miserable because I’ll go to a birthday party tonight! :D Hope I can bring some Argentinean food picture for you tomorrow! :)
