Life & Eats: 3/10


It has been a busy week. I had two days of retreat at work which implied early rise and long day away from home for both Sofia and me. Sofia was very collaborative, early rise seems the new norm (around 6am).

Her latest favorite toy: Lacing beads

on Saturday we went to the DC zoo, her first encounter with animals! :lol:

we were more excited than she was. She was busy looking around, not animals, but people!

and was quite cooperative for the pic with the panda

after the zoo, we went to the mall. A stop to sephora to test out some lipsticks and eyeliners. And got a new toy for the family

we stayed in on Sunday and this is what happens at the end of day

Eats:

kale salad with tomato, mushroom, tofu in a hummus-tahini sauce

as side dish for the spinach cannelloni with pumpkin sauce

we had vietnamese for lunch one day and I had vermicelli with grilled shrimp

made a chicken salad, served in english muffin

sauteed kale with red onion and tofu in coconut oil and soy sauce, served with brown rice

as breakfast: i’ve been having high protein cake with PB sauce and almond butter

oh… I made lemon blueberries muffins for Sofia

Lemon blueberries muffins

  • 1/2 cup all purpose flour
  • 3/4 cup white whole wheat flour
  • 1/4 cup light brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1.5 TB lemon spread from Tj’s
  • Juice from the one lemon
  • 1/2 +2TB milk
  • 1/4 cup oil
  • 1 egg
  • 1/2 cup frozen blueberries
  1. Mix dry ingredients and wet ingredients separately
  2. Bake at 350F for 25 min

  1. Good job Sofia for stringing the beads! She must have very good eye-hand coordination. :) I remember the first time we took Noah to the zoo all he cared about was the seagulls. LOL

  2. I remember when the kid had his first beads set! Sofia is a smart girl! :)

    The muffins sound good!
