Recipe: Whole Grain Pumpkin Bread

On Sunday while Star took nap, I made a new bread ;)

Whole Grain Pumpkin Bread

Ingredients to put into the bread machine in this order:

  • 1/2 cup warm water
  • 1/3 cup milk (I used 2%)
  • 1 large egg, beaten
  • 1 tbsp oil (I used coconut oil)
  • 3/4 cup pumpkin puree
  • 1/4 sugar
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp pumpkin spice
  • 2 cups WW flour
  • 1 cup oat flour (oatmeal grounded + oat bran)
  • 1/4 cup vital wheat gluten
  • 2 tsp yeast

Once the dough is read, transfer it to a baking pan

use the microwave steam method (put a glass of water and microwave for 3 min at high, take out the glass and put the dough. The steam from the hot water creates a good environment for the fermentation.

30 min later… look how it has risen

bake at 375F for 30-35 min

remove from the pan. let it cool and store at the freezer for 15 min before slicing it

The texture is like bread, not the pumpkin-bread-cake like texture which is cakey. It’s dense, a bit of chewy, a touch of pumpkin bread flavor and it’s WW!!! :D

I had another stir-fry (it’s my safe meal now! I am having one of these everyday ;), just love love it!!!)

this has iceberg lettuce, mushrooms (I think I’m eating almost 5 pounds of mushrooms every week!!!), bamboo (obsessed! A tutorial soon), vegetarian chicken, green peas, sauteed with olive preserved olive leaf, soy sauce, brown sugar and white pepper (another obsession!)

served with a steam corn (all time obsession! ;))

Okay, ladies, I’ll be posting more fashion and beauty related things in the future, because I’m reading a lot of fashion/beauty blogs lately and I feel inspired! ;) Yesterday I spent the whole afternoon reading/watching this sweet petite-girl~~~ :)

Weekend happening: sleep, eat, gym and repeat

The past few days were total relaxation. Due to Star’s luck of sleep on his business trip, all he wanted to do is to sleep (day and night)! AsĀ Erin would say:” Yes, my lord, sleep we’ll do! :) Other than the 5k race on Saturday’s morning and my dearest friend’s birthday party at night, we just stay at home and relax.

I finally convinced Star to join my beloved gym! He’s been sedentary for more than a decade. I encouraged him to exercise more but always failed until now. He has turned 34 few months ago and it became mandatory for health purpose to start exercising, specially with his propensity to have diabetes (his mom has it). So, now he has committed to go to the gym whenever he stays with me (hopefully >3 days a week). So far he’s liking it and I like it even more!!! Because now I don’t feel bad to leave him at home alone when I go to the gym~~~ :lol:

While he takes long naps… I bake ;)

for my lord: peanut butter cookies with homemade PB

I used roasted peanut with sea salt. Ground 7 min and done! Nothing else, just peanuts!!!

beat 100g butter with 80g of sugar and 2 eggs

once it becomes white, add 100g peanut butter

add 200g flour

and 1/4 cup of sesame seeds

bake at 375F for 20 min.

I also made multicolored soy milk (soy, aduki, mung and black bean) for breakfast

It was the last piece of bread… so I’m making a new bread (as I type)

Other eats:

noodles with bok choy, eggs and olive preserved olive leaf

I’ve started to make nutritious soup that takes >4 hours to make. I made black chicken soup with assorted chinese herbs on Saturday and this one on Sunday.

this one has pork feet, black beans, shiitake and red dates. I made sure to take out most of the fat from the pork feet, so what’s left is the collagen. Collagen = beauty weapon against saging!!! All asian girls know that ;)

If you excuse me, I need to look how the bread-making is going and to prepare lunch for my lord. hahaha… That’s how I feel today, most of the days I feel like the queen and he my loyal servant ;)

Q: Are you a soup person? What’s your favorite soup? I’ve never been a soup person, but my acupuncturist told me that soup is good, specially for people with weak digestive system, so more soup for both of us!

Gifts & Race

Star came back from Barcelona on Friday afternoon and look all the gifts he brought for me! :lol:

Although everytime he goes for business trip I tell him not to “waste” money and that I don’t need anything. I love that he completely “ignores” me. And what’s even better, I love everything that he got for me!!! So… actually there’s no “waste” ;)

and then… a race!!! My first race in 2011! By George 5 & 10 K.

Our running group planned to do a 5k & 10k on Saturday. I wasn’t sure if I’m prepared to participate because of my knee issues. But after talking to Star, he encouraged me to go anyway. Because I have such great time with my running buddies, also my best friends, so even I have to finish the race walking, it worth it! ;) I’m so glad that I went!

Stretching. Our coach/leader Carlos insists that stretching before running is important! I never do but he’s a pro so we all did.

It was a beautiful day and flat course, just besides the river. But the wind was terrible. As Carlos put it: it was the IDEAL day to NOT run a race. :D

it was a small event, no t-shirt and a little disorganized but whatever ;)

I started slow and paid specially attention to how my knee feel. The first half was good, no pain. But when I turned back, I started to feel some pain on the left knee (again), so I slowed down. The pain persisted so I didn’t want to push it too hard. I switched to 1 min running, 1 min walking mode. 3-4 times of that and I reached the end point! I still have some comforts afterwards, but not too bad. I’m definitely going to the doctor this week. Something is going on there for sure.

We found another friend with his wife when we finished. So here’s the expanded group.

Once again I had so much fun with my friends. They’re all soooooo funny, specially Cesar, the funniest man in the world!!! Both Star and I love him!!! :D

I need to solve the knee problem ASAP because running is something that I really LOVE, both alone and with good friends!!!

Why something so good is so bad for us (all the runners out there have some kind of injury)?

Why we tend to love things that are bad for us?

Why we have to make tough choices in life (joy of running vs. pain)?
